Classic Swedish Cinnamon Bun Recipe (Kanelbullar)
This recipe makes soft, flavorful buns with a warm cinnamon filling — perfect for sharing.
🧺 Ingredients
Dough:
- 250 ml milk (lukewarm)
- 75 g butter
- 25 g fresh yeast (or 7 g dry yeast)
- 75 g sugar
- 1 tsp ground Ceylon cinnamon
- ½ tsp salt
- ~500 g all-purpose flour
Filling:
- 75 g soft butter
- 3 tbsp sugar
- 2 tbsp ground Ceylon cinnamon
- Topping:
- 1 egg (for brushing)
- Pearl sugar or sliced almonds (optional)
👩🍳 Instructions
- Warm the milk gently and melt the butter into it. Let cool until lukewarm.
- Crumble yeast into a bowl and dissolve with the milk mixture.
- Add sugar, cinnamon, salt, and gradually mix in flour until a soft dough forms.
- Knead the dough until smooth and elastic. Cover and let rise for 45–60 minutes.
- Roll out the dough into a rectangle.
- Spread butter over the surface and sprinkle evenly with sugar and cinnamon.
- Roll up tightly and slice into buns.
- Place on a baking tray, cover, and let rise again for 30 minutes.
- Brush with egg, add pearl sugar if desired.
- Bake at 220°C (430°F) for 8–10 minutes until golden.
